Ashton is an Old English place name, meaning "Ash Town" ("Ash" as in the type of tree). It will have become a surname through the people who lived there ("John of Ashton" would eventually become "John Ashton"), and then will have become a first name from there, possibly because a woman gave her son her maiden surname as a first name.
