I think it can work; it's unlikely that you'll meet a Sanjay who isn't of Asian-Indian descent, and I can see a Sanjay asking to be called Sam in an effort to seem less conspicuously "foreign" or being nicknamed Sam by his friends.
I wouldn't do it, but I don't have a hard time imagining somebody doing it.

I have an in-law (male) who emigrated to Canada (one of many);his name is two syllables and not remotely hard to say;nevertheless, he decided he would take on the nick-name of "Chuck".
Didn't take, however,as most of his new friends were also ex-middle-east, and the family in Canada refused to say Chuck.
