I think
Elizabeth with no nn is okay. I don't like
Lizzie, because it sounds a little infantile.
Liz is gorgeous and
Ellie is kind of boring now.
I'd choose
Elsie. It's cute and not as common as the other nicknames. After
Elsie, I'd choose
Betty.
It isn't boring. I might use it. :P
I used to know a lovely, kind librarian in her fifties with this name. However, I don't know how her name was written, since in my country four spellings of this name are used -
Elizabeth,
Elisabeth,
Elisabet and
Elizabet.
