Anyone know what Hince means or where it comes from. I've always been told it's German.

I don't think the spelling is very German, but I believe the name is. It's a variant of Heinrich (Henry), and a more normal German spelling would be HINZ. In Germany there is the phrase "Hinz und Kunz" meaning "everyone". It's from Heinrich and Konrad, two very widespread names in the late Middle Ages.
