This is an interesting surname. I doubt the German origin that it is from the German Philister, and the name itself doesn't exist as a surname today.
This surname Fillister doesn't seem to exist today. A variant is Filister, an extremely rare surname. Now, the Filisters of the US could be of English origin, as the surname Filister/Fillister once existed in the UK.
This surname Fillister I think is of French origin. It was an English surname mostly found in London. Perhaps it is a English form of a French word, but I do not know. Another possible origin is that Filister is a variant of Filliter, an English surname from county Dorset, London, and Yorkshire. Filliter is also a rare surname. I think it is also of French origin. The Etymology, I'll have to look into that further.
