It seems that Ireland and the U.K. are the main places of origin for the surname, St. George. I would imagine it has to do with Saint George, the Christian martyr. He is the patron saint of England and there is a lot of iconography and stories about him. (For more info, see http://en.wikipedia.org/wiki/Saint_George). I believe the surname was adopted to honor St. George.

Probably originates in one of the places in France called Saint Georges.
