First, people really need to stop naming their dogs
Sadie. It's reaching to a ridiculous extent, and it's ruining a perfectly good name. Also, I really, really, really think you ought to spell it the traditional way. Saydee does look illiterate, as other posters have pointed out. Other forms and names with similar meanings of the names you don't like I have listed below. (I do really like
Sadie Lillian, and
Sadie Helen is also very nice.)
Alice-
AllisonAileasAilisAdelaideArwen (Same "noble" meaning from here down)
Alina Arya EthelAdaraAdela
Estelle-
Stella, although it doesn't flow with Sadie/Saydee
Other "star" meanings...

Esther- I don't know if you would consider
Hadassah. It isn't like
Esther necessarily, but it was the original name of the Biblical character. Whether you would consider that to still honor your relative I don't know. It also means "star", so see the above list for same meanings.
Mary- Possibilites are endless here. :) Most of these are variants of
Mary.

Toiba- This means "dove", so I did a search of other names with the same meaning.
Jemima and
Paloma are the better ones, I think. :)
