Probably an altered form of Upsher. In some cases, it could instead be an Americanized form of German Ibscher, a nickname for someone living on unallotted land derived from Middle High German überscher "surplus". Alternatively, it could derive from German Habischer "hawker, falconer" (compare Habicht).
